November Daring Bakers

My first Daring Bakers challenge! I decided to sign up to be a Daring Baker because I like the idea of being challenged to bake something that I wouldn't normally do. They've done thing like éclairs and pretzels, and so to be honest, I think I got off easy for my first challenge. This month the challenge was Caramel Cake with Caramelized Butter Frosting. The recipe comes care of Shuna Fish Lydon of Eggbeater. The recipe can be found here. The only hard part was making the caramel and luckily enough I mastered that on the first try!

Iron Cupcake: Cranberry

I'm not really a big fan of cranberry. I like it as a juice and in Wensleydale cheese, but that's about it. So when I heard this was our secret ingredient for Iron Cupcakes, I wasn't too inspired. That said, what has come out as a result is perhaps my favorite cupcake I have made so far. This cupcake taste like those chocolate donut holes you can get from Dunkin' Donuts. It's delicious. Fair enough, you can't taste the cranberry in the least. But these cupcakes have inspired me to use cranberry juice as a secret ingredient more often. (I've also made these cupcakes with coffee instead of cranberry juice and I can tell you the juice definitely made a difference)

Cheddar apple pie cupcakes

These cupcakes are my entry for Iron Cupcake:Cheese. When I first heard the ingredient I knew I had to use cheddar. The progression to using apples as well naturally followed. These cupcakes taste exactly like apple pie. In fact, I prefer them to apple pie because I'm not a big fan of pie crust. However, I'm not sure if I prefer them to apple crumble BUT next time I make these I will try them with a crumble topping instead of a cream cheese topping and see what they are like. The recipe that follows is my own creation.

Boston Cream Cupcakes

I have officially made the world's best cupcakes. For me, the following cupcakes represent perfection. Now I should preface this by saying that I am a huge fan of Boston Cream Pie. My dad and I used to sit around the kitchen table when I was a kid and eat a whole pie together. Every birthday for my cake I wanted Boston Cream Pie cake. We used to make this using one box of yellow cake mix, one box of vanilla pudding and one tub of chocolate frosting. Now that I've grown up I can't stand buying boxed cake mix but could never find a recipe that replicated the taste I love so much. Well this is it. These cupcakes came out exactly as I remembered from my days of sitting around that table getting chubby with my daddy.
